Exclusive e-book: Analysis of edible oils
This e-book takes a closer look at a series of quality and food safety parameters as well as process efficiency indicators for edible oils on the example of palm oil. The e-book outlines the value chain of palm oil and indicates, where the analysis of element contents as well as probing oil degradation at molecular level are meaningful and routinely performed. This e-book covers three techniques, namely combustion elemental analysis, atomic spectroscopy – specifically ICP-OES techniques –, and UV/Vis spectrophotometry (molecular spectroscopy).

How elemental analysis contributes to food safety and quality. In this web seminar Analytik Jena experts present some new technological advancements and customer-oriented solutions in the field of elemental analysis that will support you in mastering application challenges of edible oils.
Detection of chlorine in palm oil
Margarine, spreads, chocolate, detergents, cosmetics, biofuels and much, much more - palm oil simply everywhere and in almost every food product. Hardly any other natural product is used as widely for industrial production as this tropical oil since it is relatively inexpensive to produce. Palm oil has to be refined in order to be processed. This often results in impurities that impair the quality and thus can affect the saftey of the respective end products. Some of the most common impurities in the refining process are chlorine compounds such as chlorpropanediols, which are harmful to the environment and health. In this article we highlight some reliable and efficient methods for the detection of chlorine in palm oil.

Oleochemistry with regard to edible oils and fats is an essential part of food production. Especially vegetable oils are indispensable for healthy nutrition – they provide the body with urgently needed nutrients as well as being high in unsaturated fatty acids and low in cholesterol. Furthermore, they support the absorption of vitamins and, last but not least, serve as carriers of flavoring substances. Far more than 200 million metric tons of vegetable oils are produced annually, mainly palm and palm kernel oil (30% of world production) as well as canola, soybean, coconut, peanut and sunflower oil. The main consumer of vegetable oils is the food industry; about 70% of the world's palm oil production is used here – for margarine, cooking oil, spreads, chocolate and much more. Palm oil is also required in large quantities for cosmetic products, cleaning agents, candles, etc.
Edible oils – benefits with risks
The predominant use of edible oils and fats in food production, cosmetics, etc. makes them very relevant to health issues. Substances such as 3-monochloropropane-1,2-diol, which is commonly known as 3-MCPD and is suspected of increasing the risk of cancer, can form during thermal processing (e.g. refining). For this reason, the WHO has defined limit values. Another aspect is GMOs (genetically modified organisms). On one hand, genetic engineering allows genetic material to be modified in order to introduce specific properties and thus, for example, give plants resistance to herbicides or insecticides. It is therefore a valuable tool in the manufacturing process. On the other hand, GMO analysis is required to verify whether the genetic material has been deliberately modified using genetic engineering methods. This information is required by legislators as well as by interested consumers.
Edible oil testing – across the entire process chain
Edible oils as ingredients of foodstuffs are subject to strict quality requirements. Be it the cultivation of rapeseed or palm oil plants, peanuts or flaxseeds, soy or olive oil trees and many other types of trees, be it the further processing in mills, refineries or the refining industry, be it trade or the testing by contract laboratories or governmental investigation offices: The globally interwoven production, supply and further-processing network requires permanent, close-meshed edible-oil testing. This applies to the entire process chain from cultivation through production and processing to the finished product.
